Fondue is usually done with white wine but I found a recipe in the paper today that gives an alcohol-free recipe. This is wonderful for teetotallers like me.
200g or cheese (a mix of Gruyere and Emmantal cheese)
45ml apple juice
1 tsp corn/potato starch (dissolved in a little bit of the apple juice and water mix)
Baguette cubes for dipping
Heat the apple juice and water mix in the fondue pot over low heat until just below boiling.
Sprinkle in the finely grated or diced cheese, add in the lemon juice and starch. Stir constantly until the cheese is melted and smooth. Adjust the heat so that the fondue stays warm and liquid, and stir frequently as you eat.
Serve with baguette cubes.
